Radicchio is one of those really exciting little lettuce heads for me. It’s not really a lettuce, it’s not really a chicory, something in between I would say. Love it’s bitterness and the fresh crispy crunch. Radicchio is so classically Italian - they usually pair it with oranges, and I tried many times this combination. The bitterness of radicchio needs something sweet to contrast it. I got the fresh radicchio in my weekly organic veggie bag. I went to my local green grocer’s - Jamal for oranges, however as soon as I arrived home, I saw those beautifully ripe peaches on my table and that has sparkled the idea. I have quickly put the raddichio and peaches in a salad bowl, added some mix lettuce leaves, made a dressing with pumpkin seed oil and orange juice. Finished it all off with chopped almonds. The effect was super tasty - that’s why I recommend it wholeheartedly!
Serves 2 1 Radicchio 1 big ripe peach few mix green leaves 1 orange handful of raw almonds 1 tbsp pumpkin seed oil salt and pepper for seasoning Cut the radicchio, peel and cut the peach in relatively large cubes, mix it in a salad bowl with few salad leaves.
For the dressing mix juice of one orange with the pumpkin seed oil and seasoning - salt and pepper. Mix the dressing in with the salad
Roast the almonds on a dry pan for few minutes - that will make them a bit more crunchy. Then chop them and finish off the salad by shrinking them on the top
